The first thing Sophia said to me this morning was, "Sara! We have a LOT of blueberries! We need to make a pie!" ...So we headed out into the backyard and picked as many ripe berries as we could...we had to add a few handfuls of frozen berries as well, since we didn't pick quite enough...we each donned our aprons...and we made a fabulous blueberry pie. :)
And this is the recipe we used:
Blueberry-Lemon Pie
2 1/4 cups flour
1/4 teaspoon salt
1 cup salted butter
1/3 cup cold water
1/4 teaspoon salt

We tried our hand at using this technique in the making of the pie crust, using the above ingredients...and it turned out marvellously. We let it chill in the refrigerator while mixing together the filling:
2/3 cup brown sugar
1/3 cup flour
1/4 teaspoon salt
8 cups blueberries, rinsed
2 tablespoons fresh lemon juice & zest from that lemon
2 tablespoons butter
1 egg plus 1 tablespoon water, whisked

We mixed together the first three filling ingredients and gently tossed the blueberries and lemon juice/zest in until just barely combined. We rolled out the pie dough, using half the dough to line our pie plate, and the other half we cut into even strips to make a lattice top. We poured the blueberry filling into the pie plate and dotted with the butter. After making the lattice top, we brushed the finished pie with the egg/water mixture and sprinkled with a bit of extra sugar before baking our pie for about 45 min-1 hour. It's still cooling so we haven't tasted it yet...but it sure looks good enough to enjoy! :)
